Scrambled Eggs De Provence au Fromage'

A fancy name for"Scrambled eggs with herbs and cheese"

Recipe for 4
8 eggs
1/2 cup cream
1 tbs butter - sliced thinly
a tsp of each of the following herbs:
tarragon
basil
thyme
marjoram
rosemary
1/2 tbs olive oil
1/2 cup of your favorite cheese



Mix the herbs together store any extra in air tight container for later use.
Using a whisk beat eggs. Add cream and beat again until frothy. Heat a non-stick skillet coated lightly with olive oil to medium. Pour the eggs into the pan and using a rubber spatula continually stir the egg so that they don't stick or burn. While the eggs are still slightly wet, add the cheese and stir through. Sprinkle 1/2 Tbs of the herb blend over the top of the eggs and then add the butter and mix through until melted. Serve immediately with toast or english muffins and your favorite breakfast meat. I like sausage with this dish.
